- 1 pound boneless chicken breasts (cut into bite-sized pieces)
- 1/2 cup Thai sweet chili sauce
- 2 tablespoons soy sauce (low sodium preferred)
- 1 tablespoon lime juice (freshly squeezed)
- 1 teaspoon garlic (minced)
- 1 teaspoon ginger (minced)
- 1 cup bell pepper (sliced)
- 1 cup broccoli florets
- 1 cup carrots (sliced)
- 2 tablespoons green onions (sliced)
- 1 tablespoon sesame seeds
Instructions
- In a mixing bowl, combine chicken pieces with soy sauce, garlic, and ginger. Let marinate for 10 minutes.
- Heat a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 7-10 minutes.
- Add bell pepper, broccoli, and carrots to the skillet. Stir-fry for about 5 minutes until vegetables are tender-crisp.
- Pour in the Thai sweet chili sauce and lime juice. Stir well to coat the chicken and vegetables. Cook for an additional 2-3 minutes.
