Description
This vibrant and satisfying dish combines grilled beef, fluffy rice, fresh tomato salsa, and avocado for a delicious meal.
Ingredients
Scale
- 2 cups rice
- 3 cups chicken broth
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon garlic powder
- 1 pound boneless sirloin steak, thinly sliced
- 1/4 cup teriyaki sauce
- 1/4 cup honey
- 1/2 teaspoon grated ginger
- 2 tomatoes, diced
- 1/4 cup red onion, diced
- 1 jalapeño pepper, minced
- 1/4 cup cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon sugar
- 1 avocado, sliced
Instructions
- In a small bowl, combine the diced tomatoes, red onion, minced jalapeño, chopped cilantro, lime juice, and sugar. Stir well and set aside for the flavors to meld together.
- In a large pot, bring the chicken broth to a boil. Add the rice, soy sauce, sesame oil, and garlic powder. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and fluffy. Remove from heat and keep covered to stay warm.
- In a medium bowl, whisk together the teriyaki sauce, honey, and grated ginger. Add the thinly sliced beef, ensuring each piece is coated well. Marinate for at least 15 minutes to infuse the flavors.
- Preheat your grill or a grill pan over medium-high heat. Grill the marinated beef for 3-4 minutes on each side, or until cooked through and slightly charred. Remove from heat and let rest for a few minutes.
- In a serving dish, start by adding a layer of cooked rice. Top with grilled beef slices, a spoonful of tomato salsa, and finish with a few slices of fresh avocado.
- Serve immediately and enjoy!
