Description

A refreshing salad made with an array of vibrant vegetables and a zesty dressing.


Ingredients

  • 3 pieces Bell Peppers
  • 1 cup Cherry Tomatoes
  • 1 medium Cucumber
  • 1 small Red Onion
  • 3 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. Wash all the vegetables thoroughly under cold water.
  2. Chop the bell peppers into thin strips.
  3. Halve the cherry tomatoes.
  4. Dice the cucumber into bite-sized pieces.
  5. Finely slice the red onion.
  6. In a large bowl, combine all the prepared vegetables.
  7. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  8. Pour the dressing over the salad in the large bowl.
  9. Toss gently to ensure all ingredients are well coated.
