Ingredients

- 3 pieces Bell Peppers
- 1 cup Cherry Tomatoes
- 1 medium Cucumber
- 1 small Red Onion
- 3 tablespoons Olive Oil

Instructions
- Wash all the vegetables thoroughly under cold water.
- Chop the bell peppers into thin strips.
- Halve the cherry tomatoes.
- Dice the cucumber into bite-sized pieces.
- Finely slice the red onion.
- In a large bowl, combine all the prepared vegetables.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
- Pour the dressing over the salad in the large bowl.
- Toss gently to ensure all ingredients are well coated.
- Serve immediately for the best texture or refrigerate for up to 30 minutes to let the flavors meld.
