Description

A delicious BBQ brisket sandwich loaded with cheese, onions, and pickles.

Ingredients

Scale
  • 2 cups cooked brisket, shredded
  • 1 cup BBQ sauce
  • 8 slices bread (sourdough or Texas toast)
  • 2 cups shredded cheddar cheese
  • 4 tablespoons unsalted butter, softened
  • 1 small red onion, thinly sliced
  • 1 cup sliced pickles

Instructions

  1. Start by warming the brisket in a saucepan over medium heat. Add the BBQ sauce and stir gently, letting the meat soak up all that smoky sweetness. I always find this step brings back the aroma of the original cook, like reliving the moment the brisket first came off the smoker.
  2. While the brisket warms, lay out your slices of bread. Spread a thin layer of butter on one side of each slice. This is what gives the sandwich that irresistible golden crust when toasted.
  3. Place a slice of bread, butter-side down, onto a skillet over medium heat. Layer generously with shredded cheddar cheese, followed by a hearty scoop of the saucy brisket. Add a few slices of red onion and pickles for a bit of crunch and brightness. Top with more cheese, then finish with another slice of bread, butter-side up.
  4. Cook the sandwich slowly, pressing lightly with a spatula. Let it toast until the bread is golden brown and the cheese begins to melt. Flip carefully and cook the other side until equally crisp and the cheese is fully melted.
  5. Once done, remove from the skillet and let it rest for a minute before slicing. That short pause helps everything settle into a perfectly gooey, flavorful bite.

Notes

  • This recipe can be customized with different types of bread or cheese.
  • For an extra kick, consider adding jalapeños or a spicy BBQ sauce.
