Description

A refreshing salad made with pineapple, bananas, strawberries, and a creamy pudding mixture.


Ingredients

  • 1 (20 oz.) can pineapple chunks
  • 3 medium bananas, sliced
  • 1 small lemon, juice
  • 1 3/4 cups diced fresh strawberries
  • 1 (3.4 oz. box) vanilla instant pudding mix
  • 3 cups whipped topping
  • 3/4 cup mini marshmallows
  • 1/2 cup chopped walnuts
  • 1/3 cup milk chocolate morsels
  • Chocolate topping
  • Maraschino cherries
  • 23 tablespoons chopped walnuts

Instructions

  1. In a medium bowl, toss sliced bananas with lemon juice to prevent browning too quickly; set aside.
  2. In a large bowl, pour pineapple juice from the can (reserve pineapple chunks for later use).
  3. Add vanilla pudding mix to pineapple juice and stir until thickened. Fold in whipped topping.
  4. Drain the lemon juice from bananas. Add banana slices, diced strawberries, pineapple chunks, mini marshmallows, chopped walnuts, and chocolate morsels to the pudding mixture. Gently stir with a rubber spatula or wooden spoon to combine all ingredients.
  5. Place the salad in the fridge until ready to serve.
  6. Before serving, divide the mixture into serving cups, top with chocolate sauce, sprinkle with chopped walnuts, and place a maraschino cherry on top.

Notes

  • This salad is perfect for summer gatherings and can be made a few hours in advance.
  • Feel free to replace walnuts with pecans or omit nuts for a nut-free version.
