Description

A warm and comforting chili made with ground beef, beans, and a blend of spices. Perfect for a family dinner or meal prep!


Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 pounds ground beef (85% lean)
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, minced (optional)
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 cans (15 oz each) diced tomatoes, with juices
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup beef broth
  • Juice of 1 lime (optional)
  • Fresh cilantro, chopped (optional)
  • Sour cream, shredded cheese, green onions (for serving)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add diced onion and cook for 5 minutes until translucent. Add garlic and cook for 1–2 minutes more.
  2. Add ground beef, break it apart, and cook until browned and no longer pink, about 8–10 minutes. Drain excess fat.
  3. Stir in bell peppers and jalapeño. Cook for 4–5 minutes until softened. Add chili powder, cumin, paprika, oregano, cayenne, salt, and black pepper. Stir well to coat.
  4. Mix in tomato paste, diced tomatoes, tomato sauce, and beef broth. Stir to combine. Bring to a boil, then reduce heat and simmer uncovered for 30–45 minutes.
  5. Add black beans and kidney beans. Simmer for another 15–20 minutes until thickened.
  6. Taste and adjust seasoning. Add lime juice for brightness if desired. Garnish with cilantro and serve with toppings.

Notes

  • This chili can be made ahead of time and tastes even better the next day.
  • Feel free to adjust the spice level by adding more or less chili powder and cayenne pepper.
  • Serve with cornbread for a complete meal.
