A warm and comforting chili made with ground beef, beans, and a blend of spices. Perfect for a family dinner or meal prep!

- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 pounds ground beef (85% lean)
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 jalapeño, minced (optional)
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
- 2 cans (15 oz each) diced tomatoes, with juices
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup beef broth
- Juice of 1 lime (optional)
- Fresh cilantro, chopped (optional)
- Sour cream, shredded cheese, green onions (for serving)
Instructions
- Heat olive oil in a large Dutch oven over medium heat. Add diced onion and cook for 5 minutes until translucent. Add garlic and cook for 1–2 minutes more.
- Add ground beef, break it apart, and cook until browned and no longer pink, about 8–10 minutes. Drain excess fat.
- Stir in bell peppers and jalapeño. Cook for 4–5 minutes until softened. Add chili powder, cumin, paprika, oregano, cayenne, salt, and black pepper. Stir well to coat.
- Mix in tomato paste, diced tomatoes, tomato sauce, and beef broth. Stir to combine. Bring to a boil, then reduce heat and simmer uncovered for 30–45 minutes.
- Add black beans and kidney beans. Simmer for another 15–20 minutes until thickened.
- Taste and adjust seasoning. Add lime juice for brightness if desired. Garnish with cilantro and serve with toppings.
Notes
- This chili can be made ahead of time and tastes even better the next day.
- Feel free to adjust the spice level by adding more or less chili powder and cayenne pepper.
- Serve with cornbread for a complete meal.
