- 4 cloves fresh garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon honey
Instructions
- In a mixing bowl, whisk together minced garlic, lemon juice, olive oil, honey, oregano, salt, and pepper.
- Cut chicken into bite-sized pieces and add to the marinade. Toss to coat thoroughly and marinate for at least 30 minutes.
- Preheat oven to 400°F (200°C) or heat olive oil in a skillet over medium-high heat.
- For baking: Spread marinated chicken on a lined baking sheet and bake for 20-25 minutes until golden.
- For frying: Cook in batches for 5-7 minutes per batch until crispy and golden brown.
- Check doneness with a meat thermometer; chicken should reach an internal temperature of 165°F.
- Garnish with fresh herbs or lemon wedges before serving.
