Description

A creamy and smooth vanilla pudding, perfect for dessert.


Ingredients

Scale
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract

Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth, then cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
  3. In a separate bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot milk mixture into the yolks, whisking constantly to temper them.
  4. Return the egg mixture to the saucepan and cook for 2-3 more minutes, stirring constantly, until thickened.
  5. Remove from heat and stir in the butter and vanilla extract until smooth. Pour pudding into serving dishes.
  6. Let cool slightly, then refrigerate until set, about 2 hours. Serve chilled.

Notes

  • This pudding can be topped with whipped cream or fresh fruit for added flavor.
  • Store leftovers in the refrigerator for up to 3 days.
