A creamy and smooth vanilla pudding, perfect for dessert.
Ingredients

- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 large egg yolks
- 2 tablespoons unsalted butter
- 2 teaspoons pure vanilla extract
Instructions
- In a medium saucepan, whisk together the sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth, then cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
- In a separate bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot milk mixture into the yolks, whisking constantly to temper them.
- Return the egg mixture to the saucepan and cook for 2-3 more minutes, stirring constantly, until thickened.
- Remove from heat and stir in the butter and vanilla extract until smooth. Pour pudding into serving dishes.
- Let cool slightly, then refrigerate until set, about 2 hours. Serve chilled.
Notes
- This pudding can be topped with whipped cream or fresh fruit for added flavor.
- Store leftovers in the refrigerator for up to 3 days.
