A quick and delicious skillet dish made with ground turkey and colorful vegetables.
Ingredients

- 1 tablespoon (15ml) olive oil
- 1 pound (450g) ground turkey
- 1 medium onion, diced
- 2 bell peppers (any color), sliced
- 2 cloves garlic, minced
- 1 teaspoon (5g) dried oregano
- 1/2 teaspoon (2g) paprika
- Salt and pepper to taste
- 1/2 cup (120ml) low-sodium vegetable broth
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Add diced onion and sliced bell peppers to the skillet. Cook until vegetables are tender, about 5 minutes.
- Stir in minced garlic, dried oregano, paprika, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in vegetable broth and simmer for 3-4 minutes until slightly reduced.
- Remove from heat and garnish with fresh parsley if desired. Serve hot.
