A delicious recipe for Garlic Herb Chicken served with mashed potatoes and glazed carrots.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 2 lbs potatoes, peeled and cubed
- ¼ cup butter
- ½ cup milk (or more as needed)
- 1 lb carrots, peeled and sliced
- 2 tablespoons butter
- 1 tablespoon honey or brown sugar
- ¼ teaspoon salt
Instructions
- Season chicken with garlic, Italian seasoning, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 6–7 minutes per side, until golden and cooked through. Remove and keep warm.
- Boil potatoes in salted water for 15–18 minutes, until fork-tender.
- Drain, then mash with butter and milk. Season to taste.
- Boil carrots for 8–10 minutes until tender; drain.
- Melt butter in a pan, add honey and salt, then toss carrots until glossy and coated.
Notes
- For creamier mashed potatoes, adjust the milk to your preference.
- Ensure chicken is cooked thoroughly before removing from heat.
