Description

This delicious spaghetti squash dish features ground turkey, fresh vegetables, and a blend of cheeses, making a healthy and satisfying meal.


Ingredients

  • 2 small spaghetti squash
  • 1 lb ground turkey
  • 1 red bell pepper, chopped
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 2 cups baby spinach
  • ¼ cup shredded parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup basil, chopped
  • 1½ Tbsp extra virgin olive oil, divided
  • ½ tsp kosher salt, divided
  • ½ tsp black pepper, divided
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp red pepper flakes

Instructions

  1. Preheat the oven to 400℉ (200°C). Carefully cut the spaghetti squash in half widthwise and scoop out the seeds. Place the squash cut side up on a baking dish and coat with ½ Tbsp olive oil, ¼ tsp salt, and ¼ tsp pepper. Roast for 40-50 minutes until fork tender.
  2. While the squash is baking, heat 1 Tbsp of olive oil in a skillet over medium heat. Add the chopped onion and bell pepper, cooking until softened (about 5-7 minutes). Add minced garlic and cook until fragrant (about 30 seconds).
  3. Add ground turkey, oregano, thyme, red pepper flakes, and remaining salt and pepper to the pan. Cook until turkey is browned and cooked through (about 8-10 minutes).
  4. Add marinara sauce, bring to a boil, then reduce heat and simmer for 5 minutes.
  5. Add spinach, parmesan, and half of the mozzarella cheese. Stir until cheese melts and spinach wilts. Taste and adjust seasoning as needed.
  6. When the squash is done, loosen strands with a fork. Fill squash halves with meat sauce mixture and top with remaining mozzarella. Bake for an additional 5-10 minutes until cheese melts. Garnish with basil and enjoy!

  • For easier handling, use a sharp knife when cutting the spaghetti squash.
  • Adjust seasoning to your personal taste preference.
