Description
This delicious spaghetti squash dish features ground turkey, fresh vegetables, and a blend of cheeses, making a healthy and satisfying meal.

- 2 small spaghetti squash
- 1 lb ground turkey
- 1 red bell pepper, chopped
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 (24 oz) jar marinara sauce
- 2 cups baby spinach
- ¼ cup shredded parmesan cheese
- ½ cup shredded mozzarella cheese
- ¼ cup basil, chopped
- 1½ Tbsp extra virgin olive oil, divided
- ½ tsp kosher salt, divided
- ½ tsp black pepper, divided
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp red pepper flakes
Instructions
- Preheat the oven to 400℉ (200°C). Carefully cut the spaghetti squash in half widthwise and scoop out the seeds. Place the squash cut side up on a baking dish and coat with ½ Tbsp olive oil, ¼ tsp salt, and ¼ tsp pepper. Roast for 40-50 minutes until fork tender.
- While the squash is baking, heat 1 Tbsp of olive oil in a skillet over medium heat. Add the chopped onion and bell pepper, cooking until softened (about 5-7 minutes). Add minced garlic and cook until fragrant (about 30 seconds).
- Add ground turkey, oregano, thyme, red pepper flakes, and remaining salt and pepper to the pan. Cook until turkey is browned and cooked through (about 8-10 minutes).
- Add marinara sauce, bring to a boil, then reduce heat and simmer for 5 minutes.
- Add spinach, parmesan, and half of the mozzarella cheese. Stir until cheese melts and spinach wilts. Taste and adjust seasoning as needed.
- When the squash is done, loosen strands with a fork. Fill squash halves with meat sauce mixture and top with remaining mozzarella. Bake for an additional 5-10 minutes until cheese melts. Garnish with basil and enjoy!

- For easier handling, use a sharp knife when cutting the spaghetti squash.
- Adjust seasoning to your personal taste preference.
