- 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
- 1 teaspoon salt, divided (for chicken and sauce)
- 1 teaspoon garlic powder
- 1 teaspoon sweet paprika
- ½ teaspoon curry powder
- 1 tablespoon Greek yogurt
- 3 tablespoons vegetable oil
- 3 tablespoons butter, divided
- 6 garlic cloves, minced
- 1 medium onion, diced
- 1 15-ounce can tomato sauce
- 1 teaspoon sugar
- ½ teaspoon black pepper
- 2 cups heavy cream
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the vegetable oil and 1 tablespoon of butter over medium heat.
- Season the chicken thighs with garlic powder, sweet paprika, curry powder, and half a teaspoon of salt.
- Once the oil is hot, add the chicken thighs and cook until browned and cooked through, about 6-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining butter and onions, cooking until softened.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the tomato sauce, sugar, black pepper, and the remaining salt, bringing it to a simmer.
- Add the heavy cream and Greek yogurt, stirring until combined.
- Return the chicken to the skillet, mixing until coated with the sauce.
- Simmer for a few additional minutes to heat through.
- Garnish with fresh cilantro before serving.
