Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt, divided (for chicken and sauce)
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter, divided
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil and 1 tablespoon of butter over medium heat.
  2. Season the chicken thighs with garlic powder, sweet paprika, curry powder, and half a teaspoon of salt.
  3. Once the oil is hot, add the chicken thighs and cook until browned and cooked through, about 6-7 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the remaining butter and onions, cooking until softened.
  6. Add the minced garlic and cook for another minute until fragrant.
  7. Stir in the tomato sauce, sugar, black pepper, and the remaining salt, bringing it to a simmer.
  8. Add the heavy cream and Greek yogurt, stirring until combined.
  9. Return the chicken to the skillet, mixing until coated with the sauce.
  10. Simmer for a few additional minutes to heat through.
  11. Garnish with fresh cilantro before serving.
