- 10 oz fresh spinach
- 1 can (13 oz) full-fat coconut milk
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
- 1 tbsp lime juice
Instructions
- Wash and coarsely chop the fresh spinach.
- Mince the garlic and dice the onion.
- In a large skillet over medium heat, add a splash of oil and sauté the onion until translucent, about 3 minutes.
- Add garlic and cook for another minute.
- Add the chopped spinach and stir until wilted, about 5 minutes.
- Pour in the coconut milk and stir to combine.
- Season with salt, pepper, and lime juice; simmer on low heat for an additional 5 minutes.
- Serve warm as a side dish or enjoy as an entree.
