- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and diced
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup chicken broth
Instructions
- Season chicken breasts with Cajun seasoning on both sides.
- Heat olive oil in a skillet over medium-high heat; cook chicken for 6-7 minutes per side until cooked through. Remove and set aside.
- In the same skillet, sauté diced sweet potatoes with salt and pepper for about 10 minutes until softened.
- Add chicken broth, heavy cream, garlic powder, and onion powder; stir to combine and let simmer for 3-4 minutes.
- Return chicken to the skillet, sprinkle with Parmesan cheese, cover, and cook for an additional 2-3 minutes until the cheese melts.
- Garnish with fresh parsley before serving.
Notes
- Feel free to adjust the spice level by adding more or less Cajun seasoning.
- For a healthier option, replace heavy cream with a lower-fat alternative.
